Ingredients

For Cake:

  • 2 Cups Flour
  • 2 TSP Baking Soda
  • 1 TSP Salt
  • 1 1/2 TSP Cinnamon
  • 1 1/4 Cup Vegetable Oil
  • 1 Cup Sugar
  • 1 Cup Brown Sugar
  • 1 TSP Vanilla Extract
  • 4 Large Eggs
  • 3 Cups Grated Carrots
  • 1 Cup Chopped Pecans
  • 1/2 Cup Raisins

For Icing

  • 2 Bars Finlandia Unsalted Butter
  • 2 Tubs Finlandia Vanilla Bean Creamy Gourmet
  • 2 Cups Powdered Sugar (sifted)
  • Whole Pecans
Instructions

Preheat oven to 350º F.

In a large mixing bowl, whisk together flour, baking soda, salt, and cinnamon. Place that bowl to the side.

In a separate bowl, mix together vegetable oil, sugar, brown sugar, and vanilla
extract. Mix until consistent throughout. Individually whisk in the eggs. Once
consistent, add in the grated carrots, chopped pecans, and raisins. Mix so that
carrots, pecans, and raisins are distributed evenly throughout.

Combine both bowls of mixture to create the cake batter.

Evenly distribute the cake batter between two round cake pans. Bake for 35-45
minutes, rotating the cake in the oven every 15 minutes.

While the cake is baking, prepare the icing by placing the butter, Creamy Gourmet
Cheese, and powdered sugar in a bowl. Use an electric beater to mix until icing is
consistent and creamy throughout.

Remove cake from oven once cooked, and let cool for about 2 hours.
Once cool, spread desired amount of icing on the cake and top with whole pecans.
