Portobello Mushroom and Light Swiss Cheese Sandwich

A vegetarian’s delight. It’s the perfect marriage of grilled Portobello and our melted Light Swiss Cheese, topped with a zingy yogurt dressing. What’s not to love?

Ingredients
  • 1 Portobello mushroom
  • 2 slices focaccia bread
  • 3 tbsp plain yogurt
  • Lemon juice
  • Finlandia Light Swiss Cheese
  • Marinade (lemon, soy sauce, fresh pepper)
  • Sprouts
  • Romaine lettuce
  • Sliced tomato
  • Banana peppers, sliced
Instructions

Place mushroom in marinade and let sit.  Place marinated mushroom on grill or use stovetop frying pan to cook mushroom until soft.  Mix yogurt with some lemon juice and spread mixture on 1 slice of focaccia.  Place mushroom on bread, top with sprouts, lettuce, tomato, pepper and Finlandia Light Swiss Cheese.  If desired, melt cheese on mushroom while cooking.

Serves 1


Let marinade sit for at least 1 hour for flavors to develop. Grilled Portobello’s let off a lot of liquid, so If you’re cooking stovetop, slice in thick slices before you sauté.
