Smoked Fish Lemon Cheese Salad

Ingredients
  • 2 Hard Boiled Eggs (10 minutes)
  • 6 oz. Smoked Fish of choosing (Hot-Smoked Salmon or Trout Recommended)
  • 1 pkg. Finlandia Sweet Lemon Creamy Gourmet Cheese
  • 1 oz. Chopped Chives or Dill (or a blend of the two)
  • 1/2 to 1 tsp. Salt
  • 1 Tbs. Lemon Juice
Instructions

Flake the fish apart into a bowl.

Roughly chop the eggs and add to the bowl

Add in all other ingredients to the bowl and mix thoroughly into a pasty consistency (Think Tuna Salad)

Serve alongside a lunch plate or party trays. Try as a snack with crackers, rye toasts and small roasted potatoes. Scoop a spoonful into some romaine lettuce and wrap ends together.
