For Chicken:

boneless, skinless chicken breasts
¼ cup
olive oil
2 tbsp
honey
2 tbsp
lime juice
½ tsp
chili powder
¼ tsp
cumin
8 slices

avocados, mashed

hamburger buns

For corn salsa:

2 cups
fresh or frozen (thawed) corn
½ cup
red and green peppers, diced
¼ cup
cilantro, finely chopped
1
jalapeno, seeded and finely chopped
1
garlic clove, minced
1
lime, juiced
Salt and pepper, to taste

Instructions

  1. For Chicken:

  2. Place chicken in a zip-top bag, add the oil, honey, lime juice, chili powder, and cumin. Make sure that chicken is fully coated by marinade. Refrigerate for at least 30 minutes, or up to 6 hours.
  3. Preheat grill, place chicken on grill and cook until internal temp reaches 165°F. Top with 2 slices of Finlandia Swiss. Top bottom of each bun with avocado, place chicken on buns and top with corn salsa.
  4. For salsa:

  5. In a large bowl, combine all of the ingredients together and season with salt and pepper to taste. Chill for at least 1 hour.
