Oven Pancake with Lingonberry Jam

60 MinutesAmericans typically think of pancakes as a breakfast item, but in Finland pancakes are often served for dessert! This oven pancake or "Pannukakku" is prepared using Finlandia Unsalted Butter and is made in a 9 x 13 pan then cut into squares to serve. I like to dust mine with powdered sugar and enjoy with a hearty dollop of lingonberry jam.
Ingredients
- 2 eggs
- 2 Tablespoons sugar
- 1/2 teaspoon salt
- 2 cups whole milk
- 1 cup all-purpose flour
- 1/2 cup (8 Tablespoons) Finlandia Unsalted Butter
- Powdered sugar
- Lingonberry jam
Instructions
Place 9-by-13-inch pan in oven and turn oven to 400 degrees. Allow the pan and the oven to pre-heat. The pan needs to get very hot.
While the oven and pan are heating, in a large bowl whisk together eggs, sugar and salt. Add milk alternately with the flour and stir.
Add the Finlandia Unsalted Butter to the pan and return to the oven to allow it to melt, which will take about 2 minutes, but watch carefully so the butter doesn’t burn.
Using heavy oven mitts, remove pan from oven and carefully pour melted butter into the flour mixture and stir, then pour the mixed batter into the hot pan and return pan to oven.
Bake for about 40 minutes or until the pancake puffs up and is nicely browned.
To serve, cut pancake into squares. Dust with powdered sugar and serve with lingonberry jam.
