Instructions
- Preheat the oven to 350 degrees and butter the inside of a 8”x5” loaf pan.
- In a large bowl, whisk together flour, sugar, baking powder, salt, and pepper. Add the cheese, bacon, and chives, then mix until all ingredients are throughly coated.
- In a small bowl, whisk together the eggs, milk, and melted butter. Pour wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Pour batter into the prepared loaf pan, then bake for approximately one hour or until a toothpick inserted into the center comes out clean of batter (a little melted cheese is normal).
- Allow bread to cool for at least 20 minutes. Run a knife around the edge of the pan, then care-fully invert. Slice and serve warm.
- Leftovers can be tightly wrapped in the refrigerator. Best served toasted.
