Preheat the oven to 350 degrees and butter the inside of a 8”x5” loaf pan.
In a large bowl, whisk together flour, sugar, baking powder, salt, and pepper. Add the cheese, bacon, and chives, then mix until all ingredients are throughly coated.
In a small bowl, whisk together the eggs, milk, and melted butter. Pour wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
Pour batter into the prepared loaf pan, then bake for approximately one hour or until a toothpick inserted into the center comes out clean of batter (a little melted cheese is normal).
Allow bread to cool for at least 20 minutes. Run a knife around the edge of the pan, then care-fully invert. Slice and serve warm.
*Leftovers can be tightly wrapped in the refrigerator. Best served toasted.
