Herbed Butter Chicken

  • 3 tbsp Finely Chopped Parsley
  • 1 tsp Freshly Ground Pepper
  • 2 Chicken Breasts
  • Olive Oil

Instructions

  1. Heat grill to high.
  2. Combine Finlandia, parsley and ground pepper in a small bowl – mix well and set aside.
  3. Put chicken breasts one at a time in a zippered bag, add a tablespoon of olive oil, seal up and squeeze bag gently to cover chicken in oil.
  4. Use something heavy to flatten chicken to an even thickness.
  5. Remove chicken from bag, turn heat down to medium/high and cook until well marked and mostly cooked on the bottom.
  6. Flip over and brush butter mixture on chicken – repeat after about a minute.
  7. Repeat brushing on bottom when cooked – add a little more to each side then remove and use however you like.
