Lemon & Gruyere Pasta

Ingredients

  • 1 box Gemelli pasta
  • 1 tbsp olive oil
  • 1 shallot, chopped
  • ½ cup heavy cream
  • 1 lemon, juice & zest
  • ½ cup reserved pasta water
  • 5 oz fresh baby spinach
  • 4 oz

Instructions

  1. Cook pasta in salted water according to the instructions on the package and reserve ½ cup of pasta water.
    In a large pan, heat the olive oil, add chopped shallot, saute until translucent.
    Add heavy cream and lemon juice, stirring often. Let sauce thicken slightly. Sprinkle in pepper to taste.
    Add the Gruyere cheese and stir. Once cheese has melted, add reserved pasta water to loosen the sauce. Add the spinach and continue to cook for 1 minute.
    Serve with additional grated cheese and lemon zest.
