- 5 Large yellow onions, thinly sliced
- 0 Kosher salt and freshly ground black pepper, to taste
For the aioli:
- ½ cup Mayonnaise
- 1 tbsp Dijon mustard
- ½ Small lemon, juiced
- 2 tsp Worcestershire sauce
- 2 Fresh garlic cloves, minced
For the burger and assembly:
- 0 Vegetable oil, for grilling
- 2 Ribeye steaks
- 0 Kosher salt and freshly ground black pepper, to taste
- 4 Onion or poppy seed brioche buns, split and lightly toasted

Instructions
- For onions, melt butter in large skillet over medium heat. Add onions and cook, stirring occasionally until softened and golden brown (about 15-20 minutes). Season with salt and pepper, set aside.
- Meanwhile, combine all aioli ingredients in a small bowl, set aside.
- Preheat grill to high heat and coat grates with oil. Pat steaks dry with paper towel. Season with salt and pepper. Grills teaks, about 3-6 minutes per side, until steaks reach desired doneness. Transfer to cutting board and allow to rest for 5 minutes before slicing.
- Spread aioli on both sides of buns. Top each bottom bun with layer of arugula, sliced steak and Swiss cheese. Top with caramelized onions and top bun. Serve and enjoy!
