For burgers

Ground turkey

Red onion, finely chopped

Fresh cilantro, chopped

Small jalapeño pepper, seeded and minced
Kosher salt and freshly ground black pepper, to taste

Vegetable oil, for grilling

For chipotle mayonnaise

½ cup
Mayonnaise

Chipotle chilies in adobo sauce

Lime juice

For assembly

Hamburger buns, split and lightly toasted

Jalapeño peppers, seeded and sliced into rounds

Thick-cut bacon, cooked
8 slices
Loose leaf lettuce, leaves separated

Instructions

  1. Preheat grill to 400°F and coat grates with oil. Combine turkey, red onion, cilantro, garlic, and jalapeno in large bowl until just combined. Form into 4 equal patties, and season both sides with salt and pepper. Grill for 6 minutes, flip and cook additional 4 to 6 minutes, until fully cooked to internal temperature of 165°F. With about 1 minute remaining on cook time, add 2 slices of Cheddar-Gruyere cheese to each patty.
  2. Meanwhile, combine all ingredients for chipotle mayonnaise in small food processor and process for 1 minute, until smooth.
  3. Spread chipotle mayonnaise on both sides of buns. Top each bottom bun with layer of lettuce and burger patty. Top with jalapeno slices and bacon and serve.
