Instructions
Hashbrowns:
- Prepare hash browns: Heat olive oil and butter in large nonstick skillet over medium-high heat. Add shredded potatoes and press down with spatula. Cover and cook 5 minutes, until edges start to get golden-brown. Season with salt and pepper, to taste. Flip and cook until potatoes are golden-brown and crispy, about another 5 minutes. Remove from skillet and set aside.
Burger:
- Heat 1 tablespoon olive oil in same skillet over medium-high heat. Crack in 2 eggs and cook to desired doneness, seasoning with salt and pepper, to taste. Remove eggs from skillet and drain on paper towels. Repeat with remaining oil and eggs.
- Preheat grill to 400°F and coat grates with oil. In large bowl, season beef with salt and pepper and mix until just combined. Form into 4 equal patties. Grill for 5 minutes, flip and cook to desired doneness. With about 2 minutes remaining on cook time, add 2 slices of Swiss cheese to each patty.
- Combine mayonnaise and maple syrup in a small bowl and spread on bottom half of buns. Top with layers of spinach, crispy hash browns, burger patty, crispy bacon and fried egg.
